The Super Simple Christmas Muddle by Sally Murphy-Blunt
A light, simple drink with the refreshing and cooling properties of mint, cucumber and lime to keep you cool this Christmas.
What You’ll Need Per Person:
- ¼ Lime
- 8 -10 roughly torn Mint leaves
- 1 tsp Maple Syrup
- 100ml Soda Water
- Crushed Ice
- A slice of Cucumber (Slice on a diagonal to get a lovely shape and a longer slice).
- A Champagne glass to serve!
How to Make Your Muddle:
Cut the lime in half and then cut each half into small wedges about 1cm thick at the base.
Place the mint leaves and lime wedges into a small bowl. Make sure the mint leaves are at the bottom to avoid over muddling (which can result in a bitter flavor).
To muddle your lime you’ll need a muddler – I used a pestle (from my mortar and pestle) but you could easily use the end of a rolling pin or even a spoon. Gently press your muddler down on the lime and mint to allowing their juice and oils to be released.
Place crushed ice into each champagne flute, until approximately half full.
Add the lime and mint to the ice (making sure all the juice is included) and add the maple syrup.
Top up the glass with soda water.
To serve, slide the cucumber down along the side of the glass and add a mini sprig of mint.
